Note: I’ll be using an 8 inch cast iron skillet so the amounts are adjusted for that.
1 Lb. Frozen Hash brown taters
½ package bacon cut into small pieces
1 cup shredded cheddar cheese
1 clove chopped garlic
1 extra egg (used to top casserole. Add more eggs if you wish)
½ cup whole milk
¼ cup finely chopped chives
1 tbls Kosher salt
1 tsp ground black pepper
Pre-heat your oven to 350 degrees.
Chop your bacon into small pieces.
In a skillet over medium high heat fry the bacon until crisp. Drain and set aside.
In a bowl add the eggs, milk, salt and pepper and whisk to combine.
Add the tater tots to the skillet. Top with the cheese and garlic. Mix well.
Add the egg milk mixture and top with the bacon. Give it a gentle toss to combine all the ingredients.
Bake for 45 minutes at 350 degrees.
In a skillet over medium low heat fry 1 to 3 eggs egg over easy. You want the yolk to remain liquid.
Top the tater tot dish with the fried egg/s yolk side down then give the yolks a few pokes to allow the yolk to run free down onto the casserole..
Serve with hot buttered toast and enjoy!!!
