INGREDIENTS:
πΉ Extra virgin olive oil (I used Early Harvest Greek EVOO)
πΉ 4 eggs, cooked to your liking (I am using soft boiled eggs)
πΉ 8 ounces white button mushrooms (halved)
πΉ extra virgin olive oil
πΉ Kosher salt
πΉ 2 cups cherry tomatoes
πΉ 2 cups baby spinach (packed)
πΉ 1 to 2 garlic cloves (minced)
πΉ 1 Β½ cups hummus (homemade ahead or quality store-bought)
πΉ seasoning of your choice (I used Aleppo pepper and Za’atar)
