1 Vegetables and pasta 240 calories (1 serving)
Ingredients
1 tsp olive oil
1/4 medium yellow onion
1/4 medium carrot
1/2 small zucchini
salt & pepper
3 oz tomato sauce
1/2 cup low sodium vegetable broth
1 cup water
2 oz ditalini pasta
1/4 cup peas, boiled
parsley
1 tbsp grated parmesan
In a large pot over medium heat, heat oil. Add onion and carrots and cook until softened, 5 to 7 minutes.
Add zucchini and cook 2 to 3 minutes. Season with salt & pepper, then add tomato sauce, broth, and water. Bring to a boil on high, then reduce heat and simmer.
Stir in pasta and cook until liquid is slightly reduced and pasta is al dente, about 12 minutes.
In the last few minutes, add peas. Remove from heat and garnish with Parmesan and parsley.

Heat oil in a large pot over medium heat. Add the chopped onions and cook for 3 minutes. Stir in the garlic and cook for 1 minute more. Stir in the meat and cook until browned.
Stir in potatoes and carrots, diced tomatoes, tomato sauce and water. Bring to a light simmer and then stir in the balsamic vinegar, chili powder, salt & pepper.
