Sweet Potato Casserole / Side Dish / Easy Recipe
Sweet Potato Casserole
325° 30 minutes
4 C Sweet Potatoes – peeled & cubed
1/2 C Sugar
6 Tbsp Butter – softened
3/4 C Milk
1/ tsp Salt
1 tsp Vanilla
2 Eggs – beaten
Topping
1/2 C Brown Sugar
1/3 C Flour
3 Tbsp Butter
1/2 C Pecans – chopped
Boil potatoes until fork tender. Drain & let cool slightly.
In large bowl mash potatoes, add butter & sugar, mix until all creamed together. Add salt & vanilla, mix until well combined. Add milk & eggs. Mix well.
Pour into 13 x 9 baking dish.
To make topping in medium bowl add brown sugar & flour, mix. Cut in butter until pebble like balls appear. Spread over potatoes.
Bake @ 325° for 30 minutes
